Anzac Cookies

Ingredients

120g butter
2 tablespoons golden syrup
1 tsp baking soda
2 tbs hot water
1 cup plain flour
1 cup light brown sugar
1 cup rolled oats
3 quarters of a cup desiccated coconut

Steps

  1. Preheat the oven to 180C. Line baking trays with baking paper.

  2. Combine dry ingredients in a bowl.

  3. Melt the butter, golden syrup and water in a large saucepan or frypan over medium heat and stir a little to combine.

  4. Add the baking soda to the pan and stir gently with a whisk as it froths up.

  5. Remove from heat and add the butter and golden syrup mixture to the sugar, coconut, flour and oats in the bowl and combine.

  6. Roll small even size balls from the mixture, place onto the baking trays leaving a small gap between each. Using the back of a slightly wet spoon, squash to flatten the biscuits.

  7. Bake for 15-18 minutes or until golden.

  8. Allow to cool. Serve.
